Protein Packed Zucchini Fritters

Looking for an alternate protein packed breakfast idea?


You can't go past these Zucchini Fritters - with ingredients including eggs, cottage cheese and buckwheat flour, enjoy your meat-free protein in this tasty combo.


In fact, you can eat these at any time of the day...pop them into a lunchbox, they are just as good cold.


Zucchini Fritters

Ingredients:

  • 4 whole eggs

  • 3/4 cup cottage cheese

  • 3/4 cup buckwheat flour

  • 1 Tbsp basil pesto

  • 1/4 cup nutritional yeast

  • salt & pepper

  • olive oil for frying


Method:

  • Add all ingredients in a large bowl and mix together with a fork until well combined.

  • Heat drizzle of olive oil in frypan, add spoon fulls of mixture to desired size.

  • Flip when golden one side and fry the other side.

  • Serve with topping of choice (goats cheese and alfalfa pictured here)
