In fact, you can eat these at any time of the day...pop them into a lunchbox, they are just as good cold.

Ingredients:
4 whole eggs
3/4 cup cottage cheese
3/4 cup buckwheat flour
1 Tbsp basil pesto
1/4 cup nutritional yeast
salt & pepper
olive oil for frying
Method:
Add all ingredients in a large bowl and mix together with a fork until well combined.
Heat drizzle of olive oil in frypan, add spoon fulls of mixture to desired size.
Flip when golden one side and fry the other side.
Serve with topping of choice (goats cheese and alfalfa pictured here)
