Super Vegie Rice

Harnessing the power of cruciferous vegetables with this Super Vegie Rice recipe enables you to batch cook and eat for breakfast, lunch or dinner.


This recipe gives you the foundations to add your protein of choice and tweak flavours to suit your palate.

Fresh Vegetables

Ingredients:

  • 1/2 head of cauliflower

  • 1 head of broccoli

  • 2 cups of kale

  • 1 cup celery

  • 1 brown onion

  • 3 cloves garlic

  • 1 Tbsp grated ginger

  • 1/2 cup sunflower seeds

  • Tamari or GF soy sauce to taste

  • 1 Tbsp Olive oil

  • optional 1 tsp Turmeric, chilli flakes

  • salt & pepper


Method:

  1. Blend the cauliflower in food processor until it resembles rice.

  2. Remove ‘riced’ cauliflower and stir fry in olive oil for approx 10min.

  3. Meanwhile, blend the broccoli in food processor.

  4. Finely chop kale, celery, onion & garlic.

  5. Add all ingredients to the mix and continue frying until tender.

  6. Serve and batch portions for freezing or eating within a few days.
